MEDITERRANEAN COOKING IN AMALFI

Discover picturesque Minori. Minori, right next door to Amalfi, is a historically rich medieval town, renowned for its pasta-making. Minori is significantly remembered as the 17th century birthplace of the "ngegni," a machine that increased pasta production to huge industrial levels. The invention of this device made Minori an open factory for pasta, with every suitably ventilated public or private space being filled with permanent d isplays of all types of pasta hanging out to dry. Even on the seafront promenade with its welcoming shade, drying pasta has fluttered in the gentle sea breezes for centuries.

Participants on this tour stay at the Hotel Villa Romana, located in the historical center of Minori with breathtaking views of the Amalfi Coast. Careful restoration has preserved the charm of what was once an ancient patrician residence. Its restaurant is well-known for offering typical cuisine of the area. Its ample kitchen equipment and recently expanded space are ideal for the cooking classes scheduled on this program.

The tour includes visits to the towns of Amalfi, Positano, Pompeii. A free day provides time for individuals to explore areas of interest at their own pace. Unspoiled scenery and impressive rocky cliffs perpendicular to the sea make a visit to this coastal area unforgettable.

CULINARY INSTRUCTORS
Instructors for this program will be Chef Ezio Falcone, a food historian and writer, and Chef Giuliano Donatantonio, executive chef at Hotel Villa Romana. Both are members of the Federazione Italiana Cuochi (Italian Chefs Association) and of the Accademia della Cucina Mediterranea. Ezio Falcone has spent more than 30 years researching recipes from Roman times and now re-proposes these recipes with ingredients available today. Chef Donatantonio is a graduate of IPSAR a nationally well respected cooking school in Salerno. His resume includes many of the best hotel restaurants in Italy and Europe. He has excelled brilliantly in numerous international culinary competitions and is a specialist in pastry making.

Typical Itinerary

Day 1 - Sat. Arrival day
Arrival in Naples, pick up at the airport or hotel at time set by Gabriele's Travels to Italy, transfer to the hotel Hotel Villa Romana in Minori (Amalfi Coast). Hotel check in, and time to relax before a welcome reception and dinner.

Day 2 - Mon. Pompeii
Breakfast. Excursion to Pompeii, one of the most popular archeological sites in the world. Guided tour of the excavations with a professional English-speaking guide. In the afteernoon return to the hotel for your first cooking class. Dinner will follow the class, and overnight.

Day 3 - Tue. Limoncello Tasting
After breakfast guided visit of a Limoncello factory with a demonstration of production techniques. Limoncello is a sweet liquor with an intense unique flavor. This drink is a classic of the Amalfi coast prepared from locally grown lemons. A visit to a Roman villa will follow the Limoncelo field trip. In the afternoon attend a second cooking class. Dinner and overnight.

Day 4 - Wed. Mozzarella
Morning field trip to visit a cheese factory where delicious Mozzarella is produced along with other cheeses. Free time for independent activities before the afternoon third cooking class. Dinner at the end of the class and overnight.

Day 5 Ð Thue. Fish Market/Ravello
After breakfast, visit a local fish monger from and learn how locals shop for fresh fish. A fourth cooking class will follow for you to enjoy along with lunch. The day will continue with a short ride to near by Ravello. Visit two of its beautiful villas: Villa Cimbrone and Villa Ruffolo. Richard Wagner composed The Magic Garden of Klingsor from the opera Parsiphal, while living at Villa Ruffolo. Return to Minori for dinner at local restaurant. Over night. (Lunch, Dinner, BB)

Day 6 - Fri. Amalfi sightseeing
After breakfast sightseeing exscursion of Amalfi,with a local English-speaking guide. Discover the town and learn about its history. Visit the Valle dei Mulini, where some of the oldest paper mills in the world still exist, the City Hall and the most significant high lights of this ancient Maritime Republic. Free time for individual activities before returning on your own to Minori for the evening farewell dinner and graduation ceremony with some entertainment.

Day 7 - Sat. Departure day
End of the tour and departure for your next destination.

Gabriele's Travels to Italy continually strive to improve tour itinerary and features. If improvement can be made, or unforeseen circumstances beyond our control make changes necessary, we reserve the right to vary itinerary excursions and to substitute hotels and restaurants. Final documents and paperwork, sent out about three weeks prior to departure date, will include an updated itinerary.
