Amalfi Coast Cooking Classes
THE THEACHERS – Prof. Ezio Falcone, chef, food historian, writer, Faculty member of Pagani’s Italian Hotel School will be the teacher for these classes. Prof. Falcone is an active member of Federazione Italiana Cuochi (Italian Chefs’ Association) and of the Accademia della Cucina Conventuale Alto Medioevale (Academy of Italian Medieval Cuisine). Prof. Ezio Falcone has spent more than 30 years researching recipes from Roman times and now reproposes these recipes with ingredients available today. Prof. Falcone will be assisted by chef Lorenzo Ferrigno student of prof. Falcone at the Istituto Alberghiero di Stato of S. Maria di Castellabate where he recently graduated. Lorenzo has, already, established himself as an eclectic and innovative chef strongly committed to re-present the wide and little known local culinary rich traditions.
THE ACCOMMODATIONS – Participants will stay at the Hotel Giordano located in the historical center of Ravello. Built by a Roman nobleman and recently restored, it has preserved the charm of an ancient patrician residence. All rooms are furnished and decorated with period furniture, and its restaurant is well-known for the typical cuisine of the area. Its location offers breathtaking views of the Amalfi Coast. Ravello represents the perfect combination of natural beauty, artistic monuments and cultural memories. For centuries, this small village, remote and shy, has attracted extraordinary geniuses, each of different cultural and artistic inspiration. Richard Wagner, while a guest of Villa Rufolo, found inspiration for the second act of the opera Parsiphal. Toscanini, Bernstein, Mirú, Escher, Robert Capa and André Gide, all worked and nurtured their creativity in Ravello.
