Asparagus Crostini
INGREDIENTS & PREPARATION:
• 2 lbs asparagus
• 1/4-1/3 cup Savor Italy olive oil (either Extra Virgin DOP or
single Varietal Extra Virgin olive Oil)
warm water
• salt & pepper to taste
• Several tablespoons of Extra Virgin Lemon Olive Oil
Finely dice the asparagus, and saute in olive oil. Add a few drops of water to moisten,
season with salt and pepper. When the asparagus
is tender, mash gently with a fork to a spreadable consistency.
Toast slices of French bread (either white or whole-wheat); rub with a garlic
glove and drizzle generously with Savor Italy olive oil before adding the cauliflower
topping. Add a heaping tablespoon of topping to each slice. Before serving drizzle
each bruschetta with a small amount of Extra Virgin Olive Lemon Oil (our fever).
It is the perfect complement to asparagus.
