BRUSCHETTA AL BASILICO E POMODORO


TOMATO AND BASIL BRUSCHETTA
These is an Italian favorite appetizer, quick to make and tasty.

Ingredients:

Topping:
Dice 4-5 ripe tomatoes (20 - 25 grape tomatoes work well)
10-15 fresh basil leaves chopped
1 teaspoon traditional balsamic per person
pinch of salt
freshly ground black pepper to taste
optional (1-2 Tablespoons of diced red onion)

Bread:
8 - 12 slices sourdough, French or wholewheat bread (select long thin loaf or adjust the size by cutting the slices in half, cut each slice about 1/2 inch thick)
1 large clove of garlic ( cut the end)
Extra Virgin DOP Olive Oil or Single varietal Olive Oil

Combine the first five ingredients (or 6 if you are using onion) and
refrigerate for several hours to meld the flavors.

Toast the bread in a broiler, on a grill or in a toaster. Toast both sides
of the bread until golden brown. Remove from heat and rub the cut side of the garlic in quick strokes on one side of the bread. Brush or drizzle each slice with Savor Italy Extra-Virgin Olive Oil before adding a generous tablespoon of the tomato topping on each of the slices. Top each slice with one scant teaspoon of Traditional Balsamic Vinegar.
Serve immediately.
