SPAGHETTI ALLA CARBONARA


SPAGHETTI ALLA CARBONARA
Spaghetti with egg and bacon sauce
These is an Italian favorite pasta dish, quick to make and tasty.

Ingredients:
1/2 to 1 pound fat back or hog jowl, salt pork or bacon
1/2 cup water
1/2 cup olive oil
1 large onion, chopped
2 peperoncini (red peppers), broken
4 to 5 pork sausage links (casings removed)
Pasta of choice (preferably spaghetti, linguine, capellini, etc.)
4 egg yolks, beaten (or use 2 whole eggs)
Pecorino or Parmesan cheese, grated

Saute´ the first 4 ingredients, then add the peperoncini and pork sausage. Continue to cook until the sausage is browned. Cook the pasta. When pasta is cooked, drain well and add it to the meat mixture. Add the beaten egg; toss until eggs are cooked. Serve with pecorino or Parmesan cheese, or a mixture of the two.
