CICERCHIE AND DRY BEANS SOUP WITH CHICKPEAS AND FAVA BEANS
1 large onion, chopped
2 tomatoes, chopped
1 to 2 stalks celery, finely chopped
Salt, to taste
2 slices of bacon
1 large clove garlic, halved
1 to 2 carrots, chopped fine or grated
1 pound beans, soaked overnight
(cicerchie, great northern, navy, black beans, cranberry, pinto or
chickpeas)
Bring all of the above ingredients to a boil. Reduce heat and simmer for 2 to 3 hours
until the beans and vegetables are soft. For a kick of flavor, drizzle a tablespoon of
peperoncino oil on top before serving. This is great on a cold, damp or snowy day to warm your body.
