PANZANELLA ALLA TOSCANA
Tuscan Bread & Tomato Salad
Ingredients:
1 pound hard bread
1 cucumber
3 tomatoes
1 onion
5 fresh basil leaves
5 tbsp olive oil
1 tbsp wine vinegar
Salt & pepper to taste
Cut the bread into cubes and place in a terrine. Sprinkle with cool water
and let soak for about 15/20 minutes.
Wash the cucumber (leave the skin on if tender) and tomato, dry and cut
into thin slices.
Peel and cut the onion into thin slices.
Squeeze the excess water from the bread. Place the bread in a salad serving
bowl. Add the cucumber, tomatoes, basil and onion.
Toss with ample olive oil and vinegar, add salt and pepper to taste. Mix well
and let rest for about half an hour before serving.
Serves 4 people.
