ANTIPASTO DI GAMBERI ALLA RUCOLA |
SHRIMP AND ARUGOLA ANTIPASTO
Ingredients for 6:
∗ 1 1/4 lb. shrimp
∗ Arugula (enough for bed)
∗ Small wedge of parmesan
∗ 2 Tbs. fresh lemon juice
Dressing for shrimp:
∗ Salt (check before salting)
∗ 1/4 c. extra-virgin olive oil
∗ 2 Tbs. fresh lemon juice
∗ Parsley
Preparation:
Boil shrimp in salted water for 2 minutes. Add lemon juice to ice water.
Plunge the cooked shrimp into the ice water.
Just before serving, dress the shrimp with olive oil, lemon juice, and salt, if needed.
Serve on a bed of Arugula with ample Parmesan curls for garnish.
Sprinkle with chopped parsley.
Delicious with a drizzle of good quality
Lemon Extra Virgin Olive Oil on each portion.
