BRUSCHETTA CON ZUCCHINE O FIORI DI ZUCCHINE |
Bruschetta with Zucchini or Zucchini Flowers
Ingredients & preparation:
• 1/3 to 1/2 cup olive oil 1 large clove garlic,
minced
• 1 to 2 zucchini or 3 to 4 zucchini flowers, cut into small pieces
• 1 egg, beaten
Heat olive oil in fry or sauté pan.
Add garlic and zucchini (or flowers).
Cook until zucchini is tender or flowers are cooked.
Add egg.
Continue cooking, stirring constantly to scramble mixture, until
egg has barely cooked.
Do Not Overcook!
Spread on slices of toasted garlic-rubbed bread (toast the bread first).
