SICILIAN TYPICAL RECIPE


MATAROCCU
Sicilian Pesto

Ingredients:
• 1/3 cup fresh basil or more if desired
• a sprig of parsley
• 2-3 ripe tomatoes
• 1/4 cup chopped celery leaves
• 2 or 3 heads of garlic
• 1/4 cup of toasted pine nuts
• 1/2 cup Savor Italy DOP extra-virgin olive oil
• salt to taste
• cayenne (1/8 -1/4 tsp)
Traditionally a wooden pestle was used to make pesto in Italy; but now the popular method is to use a food processor to combine the ingredients. Process all of the above ingredients pulsing until you reach the consistency you desire. Put the mash into a bowl and carefully stir in a half-cup of olive oil, a little at a time, until it is incorporated.

This sauce can be used just like the famous pesto sauce from Liguria. Mataroccu is ideal over spaghetti with a sprinkling of Parmesan or Pecorino Romano, or as a flavorful addition to vegetable soups. ItŐs also delicious as a sauce over fish.
